Below are the step-by-step instructions from a Volvo V60 owner on installing the ISUDAR V2 CarPlay Module.
First, we would like to express our sincere thanks to the owner for sharing this guide. We hope it will be helpful for those who are looking to remove or modify the center console screen on similar Volvo V60 models.

Step 0.
DO NOT try to remove the vent bezels that are on the immediate left and right of the infotainment screen, as shown in the manual, and as is shown in a number of videos that I found. With the V60 2019+ SPA model you WILL break the mechanism with which you can direct the outgoing air when you try to remove the bezels.
Step 1, photo 001.
Open the front passenger door and remove the side panel, either by hand or by using a prying tool.
There is a screw behind it that must be removed. The screw position is indicated by the red circle.
Remove the panel with the volume knob using a prying tool, disconnect the cable, and put it out of the way.
Remove the 2 screws that are behind this panel. (Not on photo, but you already have this in the manual that you sent, at step 1.)
Step 2, photo 002, photo 003a.
Remove the bezel from the vent opening on the front passenger side. Use a prying tool for this.
There is a screw behind it that must be removed.
Photo 003b: The bezel is kept in place by one large clip on the inner side, and several smaller clips around. The smaller clips on the outer side must not be handled with force: when re-installing the bezel, it needs to slide back in.
Beware: this is the most precarious step, and caution must be taken to not break any clips.
Step 3, photo 004, photo 005.
There is a slim metal strip. This strip is kept in place by a number of large clips inside the larger metal panel beneath it.
Use a prying tool to remove the strip. It is thin, so be gentle to not bend it.
There are a number of screws underneath it, holding the metal panel below in place, which must be removed.
Step 4, photo 006.
On the other side of the infotainment screen, there is also a slim metal strip that must be removed using the prying tool.
Remove the screw that is underneath it.
The situation now looks like photo 007.
Step 5, photo 008.
You can now remove the metal panel with the infotainment screen and vents attached to it.
Disconnect both cables and put it out of the way.
Step 6, photo 009, photo 010.
As far as I could see, the best chance to find the CAN-H (purple-wite) and CAN-L (purple-green) wires is between the front passenger door and seat, not the connector underneath the front passenger seat. The included orange CAN wire is long enough to connect at that location.
At this point, the Isudar Carplay/Android Auto module can be installed.
